I tried to make ramen and it surprisingly turned out quite well!

The process of making ramen is quite simple really, much easier than I had expected.
I've jotted down the recipe below!

When combining the ingredients and cooking the ramen, the trick is to not turn the heat up too high. Rather go for a consistent temperature where nothing at the bottom of the pot will burn.
Ingredients:
250g tofu (cut into cubes)
15 sliced shiitake mushrooms
2 roughly chopped carrots
1 cup vegetable broth
50g curry paste ( I used a tomato base, but I think a green curry paste would be better)
200ml coconut milk
2 tablespoons dark soya sauce
150g ramen noodles
30g peanuts
1/2 cup peanut butter
pinch coriander
25g spring onion
3 dried red chillies
25ml olive oil
Recipe:
1. In a pot, add the olive oil, sliced shiitake mushrooms and soya sauce. As soon as the the mushrooms are lightly fried, add the vegetable broth.
2. Once the vegetable broth has come to a simmer, add the peanut butter and stir until the peanut butter thins out.
3. Add the carrots, ramen noodles, coconut milk, curry paste and dried chillies. Stir until noodles have cooked through - this only took me a few minutes.
4. Add the peanuts and tofu and leave to simmer stirring every 5 minutes for 20-25 minutes.
5. All done! Serve with garnish of chopped spring onions and coriander.
I also made a small side salad which was a copy of one from Woolies (I know, not so innovative but I just love it so much!)
Ingredients:
100g chopped white cabbage
100g sliced yellow beetroot
100g edamame beans
1/2 cup chopped celery
1/2 avocado
pinch coriander
pinch mint
juice of one lemon
teaspoon of linseed
Recipe:
Add all the ingredients in a bowl. Squeeze the lemon juice over and sprinkle the linseed. Enjoy!
